Description:

The F&B Manager is responsible for the smooth running of the F&B offering. You will have the responsibility to develop, innovate and deliver a product mix which is quality driven whilst maintaining aggressive financial returns. This will be driven by ensuring that all working methods are reviewed and best practice is achieved so we in turn can grow our business whilst delivering excellent guest service.

Duties & Responsibilities

Key Performance Area/s:

Guest Satisfaction:

Establish a balance between guest satisfaction and the profitability of the company

Initiate corrective action when there is a complaint, follow up. No response should admit error or liability. Response should acknowledge the complaint, offer a solution and apologize for inconvenience.

Communicate with guests, check questionnaires & respond where necessary to ensure guest satisfaction.

Maintain product and service quality standards by assisting the Food and Beverage Manager in conducting ongoing evaluations and investigating complaints.

Create an operating environment that ensures consistent guest satisfaction

The Capital’s philosophy is to ensure that all dissatisfied guests are favorably impressed by our Complaint Handling. The F&B Manager must ensure that all employees are trained in complaint handling and rectifying any environment for dissatisfaction before it becomes a complaint.

Ensure that a system is established to ensure that the General Manager is immediately informed of any complaints.

Service:

Responsible for all areas of the Food and Beverage Operations of the Hotel.

Liaise on an ongoing basis with the Executive Chef, Banqueting Manager and General Manager to ensure all client needs and requirements will be met.

Work with the Executive Chef, Assistant F&B Manager, Restaurant Supervisors and F&B service staff to ensure all arrangements and details have been dealt with.

Establish a rapport with groups to ensure guest satisfaction and repeat business.

Ensure that G&C clients are met upon arrival.

Ensure that the F&B Department provide quick service for last minute changes.

Inspect all Meeting Rooms, Function Rooms and the Restaurant prior to guest arrival or service.

Inspect the buffet and make appropriate changes to ensure that the Company’s quality standards are met.

Ensure that the kitchen, restaurant, bar and store rooms are opened and closed according to policy.

Along with the Executive Chef menu planning, development and meal specials.

Ensure all kitchens and Front of House F&B areas are organized, set up to standard and maintain a high level of cleanliness.

Assist the Executive Chef with food quality and presentation.

Ensure that all Food and Beverage staff have been trained in the relevant F&B Operations.

Ensure that all Food and Beverage staff have been trained on product knowledge with regards to the Restaurant Menu, Conference and Banqueting Services and Beverages.

Sales, Profits, Cost Control and Administration:

Be aware of what the budgeted food sales figures for the month are and actively work at achieving these budgets.

Be aware of what the budgeted beverage sales figures for the month are and actively work at achieving these budgets.

Carefully monitor staff activities and productivity in order to minimize overtime payments.

Achieve maximum profitability by controlling costs and quality of service.

Actively market the Hotel’s F&B Facilities in order to achieve and exceed budgets.

Control of all F&B crockery, cutlery, glassware, linen and equipment.

Actively participate, supervisor and manage the 10, 20- and 30-day stock takes.

Complete Function sheets accurately and timeously.

Completion of F&B forecasts and budgets.

Calculation and control of Food and Beverage Cost Percentages.

Ensure that all F&B outlets has the correct level of supplies and check levels regularly.

Control the inventory and establish relationships with suppliers to ensure the Hotel receives competitive rates.

Ensure proper cash management and cash up procedures are followed by all F&B staff as per Company Policy.

Ensure waste is controlled and properly recorded.

Ensure that Bar requisitions are completed as per Company Policy.

Ensure purchasing procedures are followed as per Company Policy.

Ensure that relevant meetings are held with F&B staff as per Company Policy.

Desired Experience & Qualification

Requirements:

Matric

Hospitality Management Qualification or similar

Proven Food and Beverage management experience within a 4/5-star hotel (4 years+)

Good understanding of the Food and Beverage Operation as a whole. (Including Food Cost and Beverage Cost)

Hotel management diploma or equivalent

Hands on Problem Solving approach and the ability to remain calm under pressure

Customer service driven with outstanding communication and active listening skills

Ability to work as part of a team, as well as independently

Huge emphasis on staff training and development

Effective communication with members of staff as well as Guests of the Hotel

Honest and trustworthy beyond approach

Great attention to detail

Presentable/Professional appearance and well spoken

Team Player who leads by example

Proactive in approach
