Summary of Position
As the Executive Sous Chef, you will play a pivotal role in leading and inspiring our kitchen brigade, ensuring that each dish reflects the unparalleled luxury and sophistication that our hotel is known for. You will work closely with the Executive Chef to manage daily kitchen operations, mentor junior chefs, and maintain the highest standards of food quality, presentation, and service.
Roles and Responsibilities
Job duties include, although are not limited to:
• Assist the Executive Chef in overseeing all culinary operations, ensuring efficient kitchen workflows and maintaining high standards of food quality and hygiene.
• Collaborate with the Executive Chef to design, develop, and update menus that align with the hotel’s luxury brand and reflect seasonal ingredients, contemporary trends, and guest preferences.
• Lead, mentor, and train the kitchen staff, fostering a positive work environment that encourages creativity, teamwork, and professional growth. Conduct regular performance reviews and provide feedback.
• Ensure that all dishes are prepared to the highest standards of taste, presentation, and consistency, adhering to established recipes and portion sizes. Conduct regular tastings and quality assessments.
• Assist in managing inventory levels, ordering supplies, and monitoring food costs to ensure profitability while minimizing waste. Work with the purchasing department to source the finest ingredients.
• Maintain strict adherence to food safety, sanitation, and health regulations. Ensure that all kitchen equipment is properly maintained and in good working order.
• Collaborate with the catering and events teams to create bespoke menus for special events, banquets, and private dining experiences. Oversee the culinary execution of these events to ensure guest satisfaction.
• Engage with guests when appropriate, responding to feedback and accommodating special dietary requests to enhance the guest experience.
QUALIFICATIONS:
• Required to have 12-15 years culinary experience with a minimum of 5 years within a luxury hotel, fine dining experience preferred. Culinary degree or equivalent certification from a recognized culinary institution also preferred.
• Exceptional culinary skills with a passion for innovation and creativity in menu development.
• Strong leadership and communication skills, with the ability to motivate and manage a diverse team.
• Comprehensive knowledge of food safety, sanitation, and health regulations.
• Ability to work under pressure in a fast-paced environment, managing multiple tasks while maintaining attention to detail.
• Proficiency in inventory management, cost control, and budgeting.
• A commitment to delivering an exceptional guest experience, with a keen understanding of luxury service standards.
• Bilingual (English/Spanish) is a plus.
• Knowledge of global cuisine and contemporary culinary trends.
PHYSICAL REQUIREMENTS:
• While performing the duties of this job, the employee is regularly required to stand and walk for extended periods of time, twist at the neck and trunk, bend at the waist and stoop, kneel, crouch, or crawl. The employee is occasionally required to reach with hands and arms, reach overhead, above shoulders and horizontally. Employees will use hands to handle objects and tools and operate service equipment. The employee must regularly lift and/or move up to 25 pounds and occasionally lift and/or move up to 40-pound objects. Vision abilities required by this job include close vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Employees may use vision to monitor food quality and quantity and may also order supplies, etc. Must be physically able to lift up to 50 lbs. and carry heavy trays and equipment, as well as delicate China and barware
• Ability to endure abundant physical movements throughout the work areas.
• Job requires indoor and outdoor service in fluctuating weather
