Input into menu design including photo cards, recipe cards, costings, implementation and training of staff in regards to menu dishes Running of the kitchen Management of staff Dealing with customers Ability to step in & run kitchen in executive chefs absence Weekly meetings Constant guidance & training of apprentices Responsibility for all aspects of HACCP Ensuring daily procedures are met ( temp checks, cleaning logs, receiving of goods etc) Reaching weekly/monthly targets cogs, wages, KPI Making sure all meals are plated to a high standard & in conjunction to recipe cards, photo cards In head chefs absence is responsible for the following Ordering Monthly audits rostering Hours of Work
Weekly roster - Full time position - Shifts range from early morning starts to late finishing times.
Must be available days, nights, weekends, and public holidays
